Pumpkin Muffins

I recently made pumpkin muffins! It is baking season. I usually only feel like baking during fall and winter. I love fall flavors such as pumpkin, ginger and molassas.



Here is where I got the recipe... but I changed a couple of things.

1. Instead of three cups of white sugar, I used two cups white sugar and one cup of brown sugar
2. I added 1/2 teaspoon of cloves.
3. Instead of using a cup of oil, I used a cup of melted Natural Balance butter spread.
4. I added chocolate chips to half of the batter so I had one batch of plain pumpkin muffins and one batch of chocloate chip pumpkin muffins. I prefered the choclate chip version.

They turned out very tasty, but next time I would add a bit more pumpkin. On the recipes site, someone suggested adding cranberries and pecans which sounds pretty delicious too.
